Lutein
Lutein, a carotenoid, is extracted from marigold flowers grown on commercial plantations. It is naturally oil soluble, but it can be emulsified to produce a water dispersible liquid. Lutein is a strong antioxidant. Lutein is permitted for food use in the EU, but not in the US.
Advantages
Lutein provides a yellow hue with good heat stability and also functions well over a wide pH range. It is a rich source of natural carotenoids.
Applications
Dairy – including milk, ice cream, desserts, yogurt, and fruit prep
Beverages – yellow hue in cloudy beverages
Health Supplements – aimed toward the prevention of macular degeneration
