Natural Colour Tech Tips
Natural Beta-Carotene
D.D. Williamson offers a naturally derived alternative to synthetic beta-carotene in the U.S. to colour beverages, yogurt, ice cream, pudding, confectionery, bakery products, and condiments. DDW beta-carotene offers substantial advantages over the synthetic alternative.
Process Cheese Using Naturally Derived Ingredients
Consumer demand for snacks, prepared meals, and sandwiches has increased the market for process cheese. Retail sales of process cheese now exceed $2.2 billion* in the United States. Process cheese accounts for 15 to 20 percent of the U.S. retail market for cheese overall. In a finished process cheese product, annatto pigment content is typically 15 to 20 ppm.
Natural Blue Colouring
A naturally derived blue colouring is available in either liquid or powdered form. Created by our strategic colouring partner, colorMaker, the new, water-soluble natural blue colouring is derived from anthocyanins extracted from vegetable juice (red cabbage) and holds the US Patent No. 7279189.
DDW Annatto Advantage
Annatto extract powder colour intensity declines over time from oxidation. Drying methods such as spray-drying expose annatto to excessive oxygen and heat, increasing risk. Exposure causes some food products to fade during storage.
